In my never ending quest for new dishes to make for my ravenous family I stumbled upon this beauty. Mongolian beef, I know not Japanese but I why not?!?! Home Based Mom has a wonderful recipe that we tried and since we are on a Health kick I bypassed the frying part. Yup! She is right, still YUMMY! All but one little Munchkin did not like the beef so instead Pumpkin ate just rice and edamame. I swear she is going to turn into one ;)
Sorry about the photo. Just found that food photography might not be my thing.... always so hungry and not patient enough to get a great shot. OR.. Maybe, just Maybe the fact that Hubby was weaving his hands and bouncing his basket ball in the kitchen the whole time might have something to do with it.

Wooo Hooo!!! This weekend was a mini spending spree for us here at Little Mochi's. Hubby and I finally broke down and bought a new bed. This necessitated a trip to Bed Bath and Beyond since we went from a queen to a king size bed. Here comes the Big Kid part.... I have a bed set that matches and is PRETTY!!!! Yup! Hubby actually said I could go ALL by myself, which is a gift in itself, and that I could buy whatever made ME happy. Now, this store almost caused a divorce over bedding the last time Hubby and I went. This is NO exaggeration, just ask my Mother in Love. Our taste in decor for the house are like night and day, so when he uttered these words I was happy then terrified all at once. I was trying not to show fear just in case he was one of those Pod people.
Okay here is my new bed... What do you think?
I am happy with a set that is not pieced together with stuff given to us and what we bought. Hubby actually admitted that the flowers were not bad. Phew! Maybe now he will give a bit more free reign when it comes to other decorating decisions, but we will not push it ;)
Now for the feel good part of this silly post...while in que a couple in front of me forgot a coupon and stated that she could really use one right now. I just so happened to have three 20% coupons (thanks to the terrific mattress sales guy) in my bag and I gave one to her. The look on her face and her husband's when I handed it to them was wonderful. It made me very happy to make someone else happy and save them around 50 dollars. Nothing like spreading a bit of happiness every chance we get ;)
When I was a little girl Mom would always make Okazu... stir fry, which we all LOVED! Now that I am older I have found that there is some sort of secret she did not pass along when it comes to making this dish. I have not been able to recreate my Moms stir fry. I am not sure what it is. The wok? The way she added in seasonings? I guess it is just HER that made it so good! So I have been playing around with this and think I have hit a winner for my family at least.
It is is so simple and I am sure that you have all the ingredients in your kitchen right now.
It states to finely mince the garlic and ginger .... I grate it with my handy dandy thingy :)
Look at how small it mashed up the ginger and garlic... provides great flavor without the chunks and sour faces when accidentally bitten into by your little Munchkin:)
For a little kick or added flavor to your sauce put in a few drops of chili oil, just be careful with this stuff :)
Tonight I am cheating with frozen veggie and shrimp along with the sauce.
Stir Fry Sauce
3 Tbs. Soy sauce
Garlic finely minced / grated
1 Scallion thinly sliced
Ginger finley minced/grated
2 tsp Corn Starch
3 Tbs Water
Mix first four ingredients together and set aside till ready to use. Mix cornstarch and water together in separate bowl and set aside. Once the veggies are about half way done pour in stir fry sauce and then the cornstarch mixture (remember to mix prior to pouring). Mix completely to coat all veggies and protein. Serve once all is done to your personal preference.
I love this weeks challenge! This photo is special for me, My little sister on her first night home with her brand new baby girl. I know that this is not a perfect photo by any means but it is a perfect moment that I was blessed to witness.

Pumpkin LOVES to jump on the sofa cushions whenever it is time to rotate them. Do not judge me too harshly.
I am thinking that the cushions get a bit of fluffing and Pumpkin has a bit of exercise and giggles. Just one of my unorthodox cleaning techniques that the Munchkins and I do around the house. Might as well make it fun for all!
